Garden egg sauce with boiled yam



Garden eggs are scientifically called solanum melongena.  Although it is eaten raw, you would still enjoy it when it is made into a sauce and eaten with boiled yam.  Trust me, you will enjoy it.

Ingredients
1/2 tuber of yam
2-3 sizeable smoked or dried fish (deboned, cleaned and washed)
1 medium sized onion (diced)
5 fresh medium sized red peppers
5 fresh medium sized tomatoes
1 cooking spoon groundnut oil or palm oil (depends on you)
10 garden eggs (fresh)           
Crayfish (grinded)
Salt to taste
Maggi
Seasoning

Method
Cut, peel and wash the yam into sizeable chunks, put in a pot and allow to boil. While the yam is cooking, wash the garden eggs properly, cut off the stalk and add to the pot of yam. Add salt to the pot and allow garden eggs to get tender before removing from the pot and allow cooling for about three minutes.
Depending on you, you could either remove the skin or leave it. Then, mash in a hand mortar or blender to form a paste. Set aside, wash and blend the tomatoes and pepper together as well.
Check on yam, if it is tender, drain water and cover the pot so that it would remain hot while you prepare the sauce.

Preparing the sauce
Pour your groundnut oil into a pot and allow to heat.  Add your onions, blended tomatoes and pepper, stir and allow to simmer for about five to eight minutes. Then, add other ingredients, stir properly and allow to cook. Taste for salt and it is ready.
Dish sauce into a plate along with the yam or serve separately. Wow, you are ready to eat.

Note- You could add other ingredients to your taste. Also, methods differ, what matters is the end product. Try this dish and you would enjoy it!!!
